Ingredients (view qty in metric system instead)
1 cup butter, room temperature 3/4 cup powdered sugar plus additional for rolling 1 large egg yolk 2 large egg whites 2 1/2 cups all purpose flour 1 tsp. baking powder 1/4 tsp. salt 1/2 cup hard peppermint candies, crushed
Directions
Beat together butter and 3/4 cup powdered sugar in a large bowl until light and fluffy. Beat in egg yolk and whites. Sift together flour and baking powder in a large bowl. Stir in salt. Gradually beat the flour mixture into the batter. Stir in crushed peppermint candies. Gather dough into a ball then flatten to a disc. Wrap dough tightly with plastic wrap. Refrigerate dough 1 hour.
Preheat oven to 350 degrees. Butter 2 large sheet pans. With your hands, roll the dough into 1 inch balls. Coat the dough balls with the additional powdered sugar. Place the dough balls on the prepared pans, spacing 2 inches apart. Flatten each cookie with a fork in a crisscross pattern. Bake cookies about 20 minutes until bottoms are golden. Transfer cookies to racks and cool completely. Store cookies in an airtight container at room temperature.
Makes about 2 1/2 dozen cookies.
