Ingredients (view qty in metric system instead)
Crust: 2 cups vanilla wafer cookie crumbs 6 tbsp. melted butter 1/2 tsp. ground nutmeg
Filling: 32 ounces cream cheese, softened 1 cup sugar 3 tbsp. all purpose flour 3 tbsp. dark rum 1 tsp. vanilla extract 2 large eggs 1 cup heavy or whipping cream 4 large egg yolks
Directions
For Crust: Preheat oven to 325 degrees. Stir together cookie crumbs, melted butter and nutmeg in a medium bowl until evenly moistened. Press the crust mixture into the bottom and 1 inch up sides of a springform pan. Bake 10 minutes. Transfer crust to a rack and cool completely. Wrap the outside of the springform pan tightly with foil.
For Filling: Beat together cream cheese, sugar, flour, rum and vanilla in a large bowl until smooth. Add eggs one at a time, beating after each addition. Beat in cream and yolks. Pour the filling over the prepared crust. Place the cheesecake in a large roasting pan. Add enough hot water to come halfway up the dides of the springform pan. Bake cheesecake about 70 minutes until set. Remove the cheesecake from the water bath and discard foil. Refrigerate cheesecake overnight.
Run a sharp knife around the inside edges of the cheesecake. Carefully remove pan sides. Slice cheesecake with a warm knife.
Serves 12.
