Ingredients (view qty in metric system instead)
1 1/2 cups grained Dijon mustard 1/2 cup brown sugar 3 tbsp. crumbled dried marjoram 2 tbsp. minced garlic 2 tbsp. frozen, thawed orange juice concentrate 1 tsp. pepper 10 pound cooked bone-in ham 2 1/2 cups Madeira 1 cup orange juice
Directions
Preheat oven to 400 degrees. Line the inside of a large roasting pan with foil. Combine Dijon, brown sugar, marjoram, garlic, orange juice concentrate and pepper in a small bowl. Score the top of the ham in a 1 inch wide diamond pattern with a sharp knife. Place the ham in the prepared pan. Stir together the Madeira and orange juice in a small bowl. Pour the Madeira mixture over the ham. Bake ham about 45 minutes until heated through. Increase the oven to 450 degrees. Spread the Dijon mixture all over the top and sides of ham. Bake about 35 minutes until the mustard mixture is golden brown. Transfer ham to a platter. Slice and serve immediately.
Serves 8 to 10.
