Ingredients (view qty in metric system instead)
1 1/2 pounds tomatoes peeled, seeded, chopped 1 small green bell pepper, chopped 1 small cucumber peeled, seeded, chopped 4 radishes, chopped fine 3 green onions, chopped 2 Tbsp. minced fresh parsley leaves 2 Tbsp. minced fresh mint or 3/4 Tsp. dried 3 Tbsp. fresh lemon juice 1 small clove garlic, mashed 3 Tbsp. olive oil pinch each of salt and pepper
Directions
In a ceramic or glass bowl combine tomatoes, green pepper, cucumber, radishes, green onion, parsley and mint. Whisk together lemon juice, garlic, salt and pepper. Whisk in the oil in a thin, steady stream to emulsify. Drizzle over vegetables and toss well.
Makes approx. 3 1/2 cups.
