Ingredients (view qty in metric system instead)
Cake: 2 cups all purpose flour 2 cups sugar 1/2 tsp. salt 2 tsp. baking soda 2 large eggs 1 cup chopped pecans 20 ounce can crushed pineapple in juice
Icing: 1/2 cup softened butter 8 ounces softened cream cheese 2 cups sifted powdered sugar 1 tsp. vanilla extract 2 tbsp. milk
Directions
For Cake: Preheat oven to 350 degrees. Grease and flour a 9x13 inch baking pan. Stir together flour, sugar, salt and baking soda in a large bowl. Stir in eggs, pecans and pineapple until batter is evenly moistened and well combined. Pour batter into the prepared pan. Bake cake 35 to 40 minutes until a toothpick comes out clean. Transfer cake to a rack. Pour icing over hot cake. Cool cake completely.
For Icing: Mix together butter, cream cheese, powdered sugar, vanilla and milk in a medium bowl until smooth.
Serves 8 to 10.
