Ingredients (view qty in metric system instead)
4 1/2 cups whole milk divided 2/3 cup long grain rice 3 tbsp. sugar 2 cinnamon sticks, broken in half 4 large egg yolks 3 ounces chopped bittersweet or semisweet chocolate 2 tsp. vanilla extract
Directions
Mix together 4 cups milk, rice, sugar and cinnamon sticks in a large saucepan. Cook over medium-low heat until rice is very tender and mixture is thick, stirring frequently, about 45 minutes. Remove from heat and discard cinnamon. Whisk together yolks and remaining 1/2 cup milk in a medium bowl. Whisk in 1/4 of rice mixture. Return mixture to saucepan. Cook, stirring, over low heat until mixture reaches 160 degrees, about 3 minutes-Don't boil. Remove from heat. Add chocolate and stir until melted and smooth. Stir in vanilla. Transfer to a large bowl, cover and refrigerate at least 4 hours or overnight. Serve cold.
Serves 6 to 8.
