Ingredients (view qty in metric system instead)
7 ounces chopped milk chocolate 3/4 cup creamy peanut butter 2 tbsp. peanut oil 1/2 cup crushed vanilla wafer cookies 5 ounces chopped bittersweet chocolate 1 1/4 cup heavy or whipping cream cocoa powder
Directions
Line an 8x8 inch baking pan with plastic wrap. Melt milk chocolate in the top of a double boiler over simmering water. Whisk until smooth. Stir together peanut butter and oil. Stir mixture into melted milk chocolate. Mix in crushed cookies. Spread mixture in prepared pan. Cover and refrigerate until firm. Melt bittersweet chocolate in the top of a double boiler over simmering water. Whisk until smooth. Remove chocolate from over water and cool to room temperature. Whip cream to soft peaks in a medium bowl. Fold whipped cream into bittersweet chocolate in two additions. Pour mixture over milk chocolate layer. Cover and refrigerate until firm.
Lift bars from pan, using plastic wrap as an aid. Carefully flip bars over and peel off plastic. Turn bars upright. Cut lengthwise into 1 inch wide strips. Cut each strip in half to form 16 bars. Sift cocoa powder over bars before serving.
Makes 16 bars.
