Ingredients (view qty in metric system instead)
2 cups sugar 2 ounces chopped unsweetened chocolate 2/3 cup heavy or whipping cream 1/4 tsp. salt 1 tbsp. butter 1/3 cup minced candied orange peel
Directions
Butter an 8x8 inch glass baking dish. Combine sugar, chocolate, cream and salt in a medium saucepan. Cook, stirring, over medium heat until sugar is dissolved and chocolate is melted. Increase heat and cook until a candy thermometer reaches 238 degrees. Remove pan from heat and swirl in butter and orange peel to combine, don't stir. Cool fudge 5 minutes. Stir fudge with a wooden spoon just until it loses shine. Pour fudge into prepared dish and cool 15 minutes until beginning to harden. Cut into 1 inch squares and cool completely. Store at room temperature in a wax paper-lined airtight container.
Makes about 1 pound fudge.
