Ingredients (view qty in metric system instead)
Brownies: 1 cup butter, softened 1 3/4 cups sugar 1 cup creamy peanut butter 2 large eggs 1 large egg yolk 2 tsp. vanilla 2 cups all purpose flour 8 ounces semisweet chocolate chips
Glaze: 8 ounces semisweet chocolate chips 1/2 cup heavy or whipping cream 1 tbsp. butter, softened
Directions
For Brownies: Preheat oven to 350 degrees. Butter a 13x9 inch baking pan. Line the bottom of the pan with a square of buttered parchment paper. Combine butter and sugar in a large bowl. Beat until light and fluffy. Beat in peanut butter and mix well. Beat in eggs, yolk and vanilla. Add flour and blend until just combined. Stir in chocolate chips. Spread the brownie batter evenly in the prepared pan. Bake about 40 to 45 minutes until brownies are puffed on top and a toothpick comes out with a few crumbs. Transfer pan to a rack and cool brownies completely.
For Glaze: Place cream in a small saucepan and heat to a boil. Place chocolate chips in a medium bowl and pour hot cream over. Let stand 1 minute. Whisk the chocolate mixture until smooth. Whisk in butter until combined. Pour the warm glaze over the cooled brownies. Let stand about 20 minutes until glaze is set. Cut into bars and serve.
Makes about 2 1/2 dozen brownies.
