Chocolate Cobbler with Apples and Raspberries

Ingredients (view qty in metric system instead)
Filling: 2/3 cup sugar 3/4 cup orange juice 1/4 tsp. ground nutmeg 10 cups peeled, cored, sliced Granny Smith or Golden Delicious apples 2 tbsp. butter 2 tbsp. all purpose flour 4 cups fresh or frozen, thawed raspberries
Chocolate Biscuits: 1 cup all purpose flour 3/4 cup cake flour 1/4 cup unsweetened cocoa powder 5 tbsp. sugar 2 tsp. baking powder 1/8 tsp. salt 8 tbsp. cold butter, diced 3/4 cup heavy or whipping cream
Directions
For Filling: Combine sugar, orange juice and nutmeg in a large saucepan and heat to a boil. Add apples and cover. Cook apples until tender, about 6 to 8 minutes. Transfer apples to a large bowl. Drain cooking liquid, reserving 1 1/3 cups. Melt the butter in a medium saucepan over medium heat. Add flour and cook, whisking, 1 minute. Whisk in the reserved cooking liquid. Cook, whisking, 2 minutes until thickened. Stir the mixture into the apples. Stir in raspberries. Pour filling into a 11x7 inch baking pan.
For Chocolate Biscuits: Preheat oven to 400 degrees. Sift together both flours, cocoa and baking powder in a large bowl. Stir in sugar and salt. Cut in the butter until a coarse meal forms. Stir in the cream until a soft dough forms. Knead dough about 1 minute until dough holds together. Roll the dough out to an 8 inch circle. Cut out circles of dough with a 2 inch cookie cutter. Reroll scraps and cut additional rounds. Place dough rounds over the top of the fruit filling.
Bake cobbler 25 minutes until fruit is bubbly and biscuits are set. Serve cobbler warm.
Serves 8 to 10.
