Ingredients (view qty in metric system instead)
1 1/2 cups sourdough baking mix /2 cup sugar 1 large egg 1/2 cup milk 2 tbsp. solid vegetable shortening, room temperature 1 tsp. vanilla extract 1/3 cup chopped chocolate covered peppermint wafer candies
Topping: 20 whole chocolate covered peppermint wafer candies
Directions
Preheat oven to 350 degrees. Grease and flour an 8 inch square baking pan. Combine baking mix, sugar, egg, milk, shortening and vanilla in a medium bowl. Beat 30 seconds on low speed. Increase beater to medium and beat batter 4 minutes. Fold in chopped peppermint wafers. Bake cake 35 to 40 minutes until top springs back when pressed.
For Topping: Place the whole peppermint wafers on top of the warm cake and let melt a few minutes. Spread melted wafers over top of cake. Cool cake completely before cutting into squares and serving.
Serves 8 to 10.
