Crust: 1 cup all purpose flour 1 1/2 tsp. sugar 1/4 tsp. salt 6 tbsp. cold butter, diced 1 large egg yolk 4 to 5 tbsp. water
Filling: 1/2 cup butter, room temperature 3 cups brown sugar 3 large eggs 1/2 cup half and half 1 tsp. vanilla extract 6 ounce package semisweet chocolate chips 1/2 cup chopped pecans whipped cream chocolate shavings
Directions
For Crust: Combine flour, sugar and salt in a large bowl. Cut in butter until mixture forms a coarse meal. Stir in yolk and enough water to just bring dough together. Flatten into a disc and wrap tightly in plastic wrap. Refrigerate 1 hour. Preheat oven to 350 degrees. Roll dough 1/8 inch thick. Fit into a 10 inch pie pan. Trim and flute edges.
For Filling: Cream together butter and sugar in a large bowl. Beat in eggs 1 at a time. Add half and half and vanilla. Stir in chocolate chips and pecans. Pour into crust and bake 30 minutes. Reduce oven to 300 degrees and bake pie an additional 50 minutes until set. Cool-pie will fall. Garnish with whipped cream and chocolate shavings before serving if desired.
