Ingredients (view qty in metric system instead)
1 cup heavy whipping cream 4 ounces chopped semisweet chocolate 8 ounces cream cheese, softened 1/4 cup sugar 3 large eggs 1 tsp. vanilla extract pinch salt 1 tbsp. Grand Marnier or other orange liqueur
Directions
Place cream in a small saucepan over medium heat and bring to a simmer. Remove the pan from the heat and whisk in chocolate until smooth. Cool to room temperature.
Preheat oven to 325 degrees. Beat together cream cheese and sugar in a large bowl until smooth. Add eggs 1 at a time, beating after each addition. Beat in vanilla, salt and rum. Arrange eight, 4 ounce custard cups or ramekins in the bottom of a large roasting pan. Divide the batter between the custard cups. Add enough boiling water to come halfway up the sides of the cups. Cover the roasting pan tightly with foil. Bake cheesecake cups about 30 minutes until set. Transfer the cups to a rack and cool completely. Cover and refrigerate at least 4 hours before serving.
Makes 8 cheesecake cups.
