Ingredients (view qty in metric system instead)
1 1/2 pounds ground beef 4 ounces ground pork sausage 2 tbsp. diced green onion 1/4 cup diced red bell pepper 1 tbsp. minced garlic 2 tbsp. cracked black pepper 2 tbsp. olive oil 2 tbsp. canned chipotle chiles in adobo, chopped 2 tbsp. chopped green bell pepper 2 tbsp. diced red onion 12 tbsp. diced tomato 2 tbsp. minced garlic 1 cup apple cider vinegar 1 tbsp. dry mustard 1 cup ketchup 1/2 cup honey 8 thick slices bacon
Directions
Mix ground beef, pork, green onion, 1 tbsp. red bell pepper and 1 tbsp. minced garlic. Form into 4 patties. Roll in black pepper. Refrigerate. Cook chipotles, green bell pepper, 1 tbsp. red bell pepper, red onion, tomato and 2 tbsp. garlic in a saucepan with oil and cook 5 minutes. Add vinegar and mustard. Simmer 15 minutes. Place in a food processor and blend until smooth. Add ketchup and honey and bring to a simmer. Cook bacon until crisp. Griill burgers, basting with sauce. Serve on buns with bacon and sauce over.
Makes 4 burgers.
