Ingredients (view qty in metric system instead)
1 Tbsp. canola oil 1 shallots, minced 4 apricots, peeled, pitted, diced 1/2 cup white wine 1/4 cup water 2 canned chipotles, minced 1/4 cup white wine vinegar
Directions
Cook shallots with oil 3 to 5 minutes. Add apricots, white wine and water. Simmer until liquid is evaporated and apricots are tender. Add chipotles and cook 1 minute. Cool and stir in vinegar. Puree in blender. Store in refrigerator in a covered container.
Makes approx. 2 cups.
