Ingredients (view qty in metric system instead)
4 ears fresh corn in husks 1/2 tsp. salt 1/2 tsp. pepper 1/4 cup mayonnaise 1 canned chipotle chili in adobo, chopped 1 1/2 tsp. snipped fresh chives 2 tbsp. olive oil
Directions
Preheat oven to 425 degrees. Peel back the corn husks and remove the silk. Season the corn with salt and pepper. Fold the husks back over the corn and wrap each ear in tinfoil. Bake corn about 30 minutes until just tender. Meanwhile, prepare grill. Combine the mayonnaise, chipotle and chives in a food processor and blend until smooth. Add olive oil and blend until combined. Remove the husks from the baked corn. Place the ears of corn on a grill rack and brush all over with the chipotle mixture. Grill the corn until slightly charred, turning frequently.
Serves 4.
