Ingredients (view qty in metric system instead)
1 tsp. cornstarch 1 tbsp. water 1 large egg white 2 large boneless skinless chicken breast halves, cubed 3 tbsp. soy sauce 1 tbsp. bourbon 1/2 tsp. sugar 4 tbsp. vegetable oil, divided 3 green onions, cut into 2 inch pieces 1/2 tsp. peeled, minced fresh ginger 1 clove garlic, peeled and minced 1/4 cup chopped walnuts hot cooked rice
Directions
Whisk together cornstarch, water and egg white in a medium bowl until combined. Add chicken cubes and toss to coat. Stir together soy sauce, bourbon and sugar in a small bowl. Heat 2 tbsp. oil in a large skillet or wok. Add chicken and stir-fry 3 to 5 minutes until cooked through. Remove chicken from pan. Add remaining 2 tbsp. oil to pan. Add green onions, ginger and garlic and cook, stirring, 1 minute. Return chicken to pan and cook 1 minute. Add soy-bourbon mixture and cook until sauce is thickened. Stir in walnuts and heat through. Serve over rice.
Serves 4.
