Ingredients   (view qty in metric system instead)
3 pounds flank steak or london broil
1/2 cup light soy sauce
4 1/2 tbsp. honey
4 1/2 tbsp. dry sherry
1 tbsp. minced garlic
1 1/2 tbsp. minced fresh ginger
1 1/2 tbsp. sesame oil
1 1/2 tbsp. dried red pepper flakes
pinch ground white pepper

Directions
Cut meat in 1/2 lengthwise, then slice diagonally crosswise in paper thin slices. Stir together soy sauce, honey, sherry, garlic, ginger, oil, pepper flakes and white pepper. Rub mixture into meat and lay strips out on racks to dry overnight at room temperature. Preheat oven to 250 degrees. Line 2 baking sheets with foil. Set the meat covered racks on top of foil. Bake 30 minutes. Reduce oven to 200 degrees. Bake 30 minutes. Reduce oven to 175 degrees and bake 40 minutes. Remove from oven, meat should be lightly browned. Let meat sit on racks overnight at room temperature. Pack into jars.

Makes about 3 dozen pieces.
