Ingredients (view qty in metric system instead)
1 1/2 pounds cucumbers, peeled, quartered and seeded 2 cups buttermilk 1/4 cup chopped onion 1 1/2 tsp. minced garlic 1 cup sour cream 1 cup plain low fat yogurt 2 tbsps. chopped chives or green onion 1 tbsp. fresh lemon juice 2 tsp. sugar pinch cayenne 1/2 tsp. salt 1/2 tsp. pepper
Directions
Puree cucumbers, butteremilk, onion and garlic until smooth. Stir in remaining ingredients. Cover and refrigerate until cold. Stir well before serving.
Serves 4 to 6.
