Ingredients (view qty in metric system instead)
1 cup all purpose flour 2 tsp. salt 1/2 tsp. pepper 1/4 tsp. cayenne pepper 1/4 tsp. paprika 1 large egg 1 cup milk 2 chicken breast fillets 4 to 6 cups vegetable oil 1/4 cup Frank's Louisiana hot sauce 1 tbsp. margarine bleu cheese dressing for dipping celery sticks
Directions
Combine flour, salt, both peppers and paprika in a medium bowl. Whisk together egg and milk in a small bowl. Slice each chicken breast into 6 pieces. Dip each piece of chicken into egg mixture then coat with flour mixture. Place coated chicken pieces on a plate and refrigerate 15 minutes. Meanwhile, heat oil in a fryer or deep skillet to 375 degrees. Add chicken to oil and fry 5 to 6 minutes until browned and cooked through. While chicken is frying, combine hot sauce and margarine in a small saucepan. Heat over low heat until margarine is melted. When chicken is done frying, drain on paper towels and transfer to a large bowl. Add hot sauce mixture and toss to thoroughly coat chicken. Pour onto a plate and serve with bleu cheese dressing and celery on the side.
Serves 2.
