Ingredients (view qty in metric system instead)
1 ounce dried ancho chilies, stemmed and seeded 1 1/2 tsp. dried oregano 1 1/4 tsp. kosher salt 1 tsp. sugar 1 large clove garlic, peeled and smashed 1 tsp. chopped canned chipotle chilies 1 tsp. lime juice 1 tbsp. olive oil 1 tbsp. water four 6 ounce salmon fillets
Directions
Preheat oven to 400 degrees. Combine ancho chilies and oregano in a coffee grinder or blender and finely grind. Transfer mixture to a small bowl and stir in sugar, salt, garlic, chipotles and lime juice. Whisk in oil and add water to form a spreadable consistency, adding more water if necessary. Spread 2 tsp. chili mixture over each salmon fillet and place in a baking pan coated lightly with cooking spray. Bake salmon to desired doneness.
Serves 4.
