Ingredients (view qty in metric system instead)
1 1/4 pounds boneless, skinless chicken breast halves 2 cans chicken broth 1 large poblano chili 2 tbsp. canned jalapeno chilis, seeded and minced 3 canned chipotle chiles in adobo, chopped 1/2 cup prepared mayonnaise 2 tbsp. sour cream 1 tbsp. fresh lime juice 1/4 tsp. salt 6 large rolls or hamburger buns 2 tbsp. melted butter 1 small red onion, peeled and sliced 6 lettuce leaves 1 medium tomato, sliced
Directions
Place chicken breast halves in a single layer in a medium saucepan. Add broth to cover and heat to a simmer. Cook chicken about 15 to 17 minutes, skimming foam off top, until chicken is firm. Drain chicken, cool and shred coarsely. Char poblano over an open flame. Place in a paper bag and seal. Let stand 10 minutes. Peel, core and chop poblano. Transfer to a large bowl and add jalapenos, chipotles, mayonnaise, sour cream and lime juice. Add shredded chicken and salt and stir to blend. Preheat broiler. Brush top and bottom halves with melted butter. Broil until toasted. Layer rolls with lettuce, onion and tomato and spoon chicken mixture over.
Serves 6.
