Ingredients (view qty in metric system instead)
1 large egg 1/2 cup melted butter 1 cup milk at room temperature 1 cup all purpose flour 2/3 cup yellow cornmeal 1 tbsp. baking powder 1/2 tsp. salt 3/4 cup grated Cheddar cheese 1/4 cup canned diced green chilies, drained
Directions
Preheat oven to 400 degrees. Line a 12 cup muffin tin with paper baking cups. Whisk together the egg, melted butter and milk in a large bowl. Stir together flour, cornmeal, baking powder and salt in a medium bowl. Stir the dry ingredients into the egg mixture until just combined. Fold in the Cheddar and chilies. Spoon the batter into the prepared cups, filling each about 3/4 full. Bake muffins 20 to 25 minutes until golden. Cool muffins in pan.
Makes about 1 dozen muffins.
