Ingredients (view qty in metric system instead)
2 tbsp. (30ml) butter or margarine, melted 1 tbsp. (15ml) vegetable oil 1/4 cup (60ml) all purpose flour 2 tbsp. (30ml) yellow cornmeal 1 1/2 tsp. (7ml) chili powder 1/2 tsp. (2ml) ground cumin 1 1/4 pounds (570g) chicken drumettes
Directions
Preheat oven to 400 degrees (200C). Combine butter and oil in a 13x9 inch (33x23cm) baking pan. Combine flour, cornmeal, chili powder and cumin in a bag. Add 1/2 of chicken to bag and shake to coat. Place in pan. Repeat with remaining chicken. Bake about 30 minutes or until meat near bone is no longer pink when cut. Cool. Cover and refrigerate 4 hours or overnight.
Makes about 12 to 14 appetizers.
