Ingredients (view qty in metric system instead)
Chicken: 2 boneless skinless chicken breasts 1 cup white wine 1 cup chicken broth 1 cup water 1/4 tsp. black pepper 1/4 tsp. dried thyme 1/4 tsp. dried oregano
Salad: 3/4 cup pitted, halved bing cherries 1/4 cup seedless red or green grapes, halved 1/4 cup chopped celery 1/4 cup toasted, chopped pecans 4 cups mixed lettuce 1/4 cup prepared mayonnaise 2 tbsp. canned, chopped mandarin orange
Directions
For chicken: Bring wine, broth, water and spices to simmer in a small saucepan. Add chicken and simmer until cooked through, about 15 minutes. Remove chicken from liquid, cool and cut into large cubes.
For salad: In a bowl gently stir together chicken, cherries, grapes, celery, pecans, mayonnaise and orange. Lay a bed of lettuce on 2 plates and mound chicken mixture in the center.
Makes 2 salads.
