Ingredients (view qty in metric system instead)
1 pound ground chicken 2 cups mild salsa 15 ounce can red kidney beans with juices 1 cup frozen, thawed corn kernels 8 ounce can tomato sauce 1 tsp. chili powder 2 cups broken up tortilla chips 1/2 cup shredded Cheddar cheese
Directions
Brown ground chicken in a large skillet. Stir in salsa, kidney beans with juices, corn, tomato sauce and chili powder. Heat to a boil. Reduce heat and simmer 10 minutes. Cover and simmer an additional 5 minutes. Sprinkle tortilla chips and Cheddar over. Simmer 1 to 2 minutes until cheese is melted. Serve hot.
Serves 4.
