Ingredients (view qty in metric system instead)
Pie: 1 1/2 pounds boneless, skinless chicken breast halves 2 1/4 cups water 1 bay leaf 2 cups peeled, cubed potatoes 1 cup chopped onion 1/2 cup dry milk powder 5 tbsp. all purpose flour 1 tsp. crumbled dried basil 3/4 tsp. poultry seasoning 1/4 tsp. salt 1/8 tsp. pepper 1 cup frozen peas
Biscuits: 2/3 cup all purpose flour 1 tsp. baking powder 1 tsp. sugar 1/4 tsp. crumbled dried basil pinch salt 1/3 cup milk 2 tsp. vegetable oil
Directions
For Pie: Combine chicken, water and bay leaf in a large saucepan. Heat to a boil. Reduce heat and simmer 20 to 25 minutes until chicken is just cooked through. Drain, reserving cooking liquid. Discard bay leaf. Chop chicken into bite-size pieces. Meanwhile, boil potatoes and onion in a large saucepan with water to cover. Drain and keep warm. Preheat oven to 400 degrees. Stir together milk powder, flour, basil, poultry seasoning, salt and pepper in a small saucepan. Add 2 cups reserved cooking liquid and stir until smooth. Cook, stirring, until thick and bubbly. Stir sauce mixture, chicken and peas into potatoes and onion. Spoon mixture into a 2 quart square baking dish. Drop biscuit dough over top in 8 mounds. Bake 20 to 25 minutes until biscuits are golden brown and a toothpick comes out clean.
For Biscuits: Stir together flour, baking powder, sugar, basil and salt. Stir together milk and oil and stir into flour mixture until evenly moistened.
Serves 4.
