Ingredients (view qty in metric system instead)
Salad: 1 pound frozen chicken tortellini 2 ounces julienned prosciutto ham 1/4 cup toasted pine nuts or walnuts 1 pint fresh raspberries mixed salad greens
Dressing: 1/4 cup white vinegar 1/2 cup melon flavored liqueur(Midori) 1 tsp. sugar 1/2 tsp. salt 1/4 tsp. pepper 1/2 tbsp. chopped fresh basil 1/2 cup vegetable oil
Directions
For Salad: Cook and drain tortellini. Cool under cold running water and drain again. Transfer tortellini to a large bowl and add prosciutto, nuts, raspberries and dressing. Gently toss together. Serve over salad greens.
For Dressing: Whisk together vinegar, liqueur, sugar, salt, pepper and basil in a medium bowl. Gradually whisk in oil.
Makes about 5 salads.
