Ingredients (view qty in metric system instead)
Chicken: 6 boneless skinless chicken breast halves, pounded thinly 1/4 tsp. salt 1/4 tsp. pepper 6 tsp. minced parsley 6 thin slices swiss cheese 6 thin slices ham 1/4 cup melted butter 1 cup soft fresh breadcrumbs
Sauce: 1 1/2 cups canned whole tomatoes, partially drained 3/4 cup heavy or whipping cream 1 tbsp. dry white wine 1 tsp. salt 1 tsp. sugar pinch garlic powder pinch white pepper

Directions
For Chicken: Preheat oven to 325 degrees. Season chicken breasts with salt and pepper. Top each breast half with 1 tsp. parsley, 1 slice swiss cheese and 1 slice ham. Roll up chicken tightly. Brush chicken with some of melted butter and sprinkle with half of breadcrumbs. Place rolled chicken, crumb-side down, in a 6x6 inch baking dish. Pour remaining melted butter over top of chicken and sprinkle with remaining breadcrumbs. Cover pan with foil and bake 45 minutes. Remove foil and bake until top is golden brown, about 30 minutes. Meanwhile prepare sauce.
For Sauce: Combine tomatoes, cream, wine, salt, sugar, garlic powder and white pepper in a medium saucepan and heat to a boil. Reduce heat and simmer sauce 5 minutes.
To Serve: Spoon rice onto a platter. Arrange chicken over rice and spoon sauce over. Garnish with apricot halves.
Serves 6.
