Ingredients (view qty in metric system instead)
2 boneless skinless chicken breast halves 2 tbsp. butter 4 cups fresh broccoli florets
Sauce: 1/4 cup butter 1/4 cup flour 2 cups chicken broth 1/2 cup heavy or whipping cream 1/4 tsp. salt 1/4 tsp. pepper
4 canned peeled apricot halves
Directions
For Chicken: Preheat oven to 350 degrees. Slice butter into 4 pieces and place in the bottom of a 9x9 inch baking pan. Place chicken on top of butter. Cover pan with foil. Bake 40 minutes until chicken is cooked through. Meanwhile, bring a medium pan of salted water to a boil. Add broccoli florets and cook until crisp-tender.
For Sauce: Melt butter in a medium saucepan. Add flour and cook, stirring, over low heat for 2 minutes. Increase heat to high. Gradually stir in chicken broth. Cook, stirring, until sauce is thickened. Season with salt and pepper. Thin with cream to desired consistency.
To Serve: Divide broccoli between 2 plates. Lay chicken breasts over broccoli. Top with sauce and garnish with warm apricot halves.
Serves 2.
