Ingredients (view qty in metric system instead)
3 cups low sodium chicken broth 1 cup uncooked wild rice 3 cups cubed cooked chicken breast 1 cup chopped fresh or canned pears 3/4 cup whole berry cranberry sauce 1/2 cup canned pear nectar 1/4 cup toasted chopped pecans 1/2 tsp. dried thyme 1/4 tsp. salt 1/4 tsp. pepper
Directions
Heat chicken broth to a boil in a medium saucepan. Stir in wild rice. Reduce heat, cover and simmer about 1 hour until rice is tender and liquid is absorbed. Stir in cubed chicken, pears, cranberry sauce, pear nectar, pecans, thyme, salt and pepper.
Preheat oven to 350 degrees. Lightly coat an 11x7 inch baking dish with cooking spray. Spoon wild rice mixture into prepared dish. Cover and bake about 30 minutes until liquid is absorbed and casserole is heated through.
Serves 6.
