Ingredients (view qty in metric system instead)
1/3 cup grated Parmesan cheese 1/3 cup fine dry breadcrumbs 1 large egg 1 tbsp. water 1/4 cup all purpose flour 4 boneless skinless chicken breast halves 1/2 tsp. salt 1/2 tsp. pepper 3 tbsp. vegetable oil
Directions
Stir together the Parmesan and breadcrumbs in a medium bowl. Whisk together egg and water in a separate bowl. Place flour in a third bowl. Season chicken with salt and pepper. Dredge chicken in flour, shaking off excess. Dip chicken in egg to coat. Dredge in breadcrumb mixture. Heat oil in a large skillet over medium-high heat. Add chicken and cook 10 minutes, turning once, until chicken is cooked through and coating is golden brown.
Serves 4.
