Ingredients (view qty in metric system instead)
6 cups chicken broth 3/4 pounds chicken breasts with bones 1/2 cup corn oil 2 cups peeled, cubed potatoes 1/4 cup butter 2 cups diced onion 2 cups sliced fresh mushrooms 1 1/2 cups sour cream 1/2 tsp. salt 1/4 tsp. pepper
Directions
Heat broth to a simmer in a large saucepan. Add chicken breasts and simmer about 8 to 10 minutes until chicken is barely cooked through. Transfer chicken to a plate and cool completely. Simmer broth until reduced to 1 cup. Skin and bone chicken breasts. Chop chicken meat.
Heat oil in a large skillet. Add potatoes and cook, stirring frequently, until light brown, about 5 minutes. Drain potatoes on paper towels. Melt butter in a large skillet. Add onions and mushrooms and cook until lightly browned, stirring frequently, about 8 minutes. Add broth and simmer 5 minutes. Stir in sour cream, salt and pepper and simmer until sauce is thickened, stirring frequently, about 8 minutes. Add chicken and potatoes and heat through.
Serves 4 to 6.
