Ingredients (view qty in metric system instead)
2 slices italian or herb bread or foccaccia 4 ounce boneless skinless chicken breast, flattened 1/4 tsp. salt 1/4 tsp. pepper 2 tbsp. olive oil 1 slice red onion, 1/4 inch thick 1 cup fresh, stemmed spinach leaves 1/2 tsp. minced garlic 1/4 cup sliced, prepared roasted red peppers 1/2 cup shredded mozzarella 2 tbsp. fresh bread crumbs
Directions
Preheat oven to 350 degrees. Season chicken with salt and pepper. Heat oil in skillet. Add chicken and cook, covered, over medium heat turning frequently until done. Reserve and tent with foil. Add onion to skillet and cook until tender. Add peppers and garlic and cook 1 minute. Add spinach and cook, stirring, just until wilted. Lay chicken in small baking pan and top with spinach mixture. Sprinkle cheese over then breadcrumbs. Place in oven and bake 3 to 5 minutes or until cheese is melted and breadcrumbs are toasted. Layer onto toasted bread, flatten slightly with spatula and serve.
Makes 1 sandwich.
