Ingredients (view qty in metric system instead)
3 tbsp. butter 1/4 cup all purpose flour 1 cup milk 1/2 cup chicken broth 2 cups chopped cooked chicken 1/4 cup chopped red bell pepper 4 ounce can diced green chilies 2 tbsp. taco seasoning 8 ounce package shredded cheddar or Mexican blend cheese six 6 inch corn tortillas, halved sour cream prepared salsa sliced green onions
Directions
Preheat the oven to 375 degrees. Coat the inside of a 2 quart casserole dish with cooking spray. Melt the butter in a medium saucepan over medium heat. Add the flour and cook 1 minute, stirring constantly. Add the milk and broth and bring to a boil, stirring constantly. Add the chicken, bell pepper, chilies and taco seasoning and cook until heated through. Remove the pan from the heat. Spread 3/4 cup of the chicken mixture in the bottom of the prepared dish. Top with 4 tortilla halves. Spread with another 3/4 cup of the chicken mixture. Sprinkle with 2/3 cup cheese. Top with 4 more tortilla halves. Spread with the remaining 3/4 cup chicken and sprinkle with 2/3 cup cheese. Top with the remaining tortilla halves and sprinkle with the remaining cheese. Bake the casserole about 20 to 25 minutes until bubbly. Garnish the casserole with sour cream, salsa and green onions and serve immediately.
Serves 4 to 6.
