Ingredients (view qty in metric system instead)
1 pound ground chicken breast 1/3 cup minced onion 1/3 cup minced celery 3/4 cup finely crushed seasoned corn bread stuffing mix divided 6 tbsp. olive oil, divided 1 tbsp. lemon juice 1 tsp. salt 3/4 tsp. pepper
Directions
Mix together ground chicken, onion, celery, 1/4 cup crushed stuffing, 2 tbsp. oil, lemon juice, salt and pepper in a large bowl. Form into eight 1/2 inch thick patties. Sprinkle 1/4 cup crushed stuffing over 1 side of patties and press to adhere. Flip patties over and sprinkle with remaining stuffing, pressing to adhere. Heat 2 tbsp. oil in a large skillet. Add 4 patties and cook about 2 1/2 minutes per side until golden brown and cooked through. Drain on paper towels and repeat with remaining oil and patties. Serve on buns if desired with your favorite condiments.
Makes 8 burgers.
