Ingredients (view qty in metric system instead)
10 cups egg bread, cut into 1/2 inch cubes 10 tbsp. butter 2 medium onions, peeled and chopped 1 1/2 cups chopped celery 1/4 cup chopped fresh parsley 1 1/2 tsp. dried thyme 2 tsp. dried ground sage 16 ounces chopped roasted chestnuts 1 cup chicken broth 1 tsp. salt 1/2 tsp. pepper 1/4 tsp. ground nutmeg 2 large eggs
Directions
Preheat oven to 350 degrees. Place bread cubes on a sheet pan and bake until dry but not hard, about 10 to 12 minutes. Transfer bread cubes to a large bowl. Melt butter in a large skillet. Add onion, celery, parsley, thyme and sage. Cook about 5 minutes until vegetables are tender. Add vegetable mixture to bread cubes. Stir in chestnuts, broth, salt, pepper and nutmeg(can be made 1 day ahead). Stir in eggs and proceed to stuff poultry cavity, or:
Butter a 13x9 inch glass baking dish. Transfer stuffing to prepared dish. Cover with foil and bake 30 minutes. Uncover and bake until stuffing is browned on top, about 30 minutes.
Makes enough stuffing for a 10 pound turkey or 8 to 10 side servings.
