Ingredients (view qty in metric system instead)
Filling: 4 cups fresh pitted cherries or 20 ounce bag frozen, thawed pitted cherries 3/4 cup sugar 2 tbsp. cornstarch 1 tbsp. dark rum 1 1/2 tsp. finely grated lemon peel 1/2 tsp. ground cinnamon 1/4 tsp. ground nutmeg 3 tbsp. cold butter, diced
Topping: 1 cup all purpose flour 1/4 cup plus 2 tbsp. sugar 1 1/2 tsp. baking powder 1/4 tsp. salt 2 tbsp. cold butter, diced 2/3 cup heavy or whipping cream 1 tbsp. butter, melted
Directions
For Filling: Preheat oven to 400 degrees. Butter a 9 inch baking dish. Stir together cherries, sugar, cornstarch, rum, lemon peel, cinnamon and nutmeg in a large bowl. Pour filling into the prepared dish and dot with butter.
For Topping: Combine flour, 1/4 cup sugar, baking powder and salt in a medium bowl. Cut in 2 tbsp. cold butter until coarse crumbs form. Add cream and stir until a soft dough forms. Roll out dough on a floured surface to a 6x6 inch square. Cut dough into 12 rectangles. Place dough rectangles side by side on top of filling. Brush dough with melted butter and sprinkle with 2 tbsp. sugar. Bake about 30 minutes until topping is puffed and golden. Transfer cobbler to a rack and cool slightly before serving.
Serves 6.
