Ingredients (view qty in metric system instead)
Coffee Cake: 12 ounce jar cherry preserves 1/2 cup raisins 1/4 cup brown sugar 1/4 tsp. ground cinnamon 2 cups Bisquick baking mix 2 tbsp. sugar 1 large egg 3/4 cup milk
Icing: 1/2 cup powdered sugar, sifted 1 tbsp. milk or water 1/4 tsp. vanilla extract
Directions
For Coffee Cake: Preheat oven to 400 degrees. Grease a 9x9 inch baking pan. Spread preserves evenly in the bottom of the pan. Stir together raisins, brown sugar and cinnamon in a small bowl. Reserve. Beat together Bisquick, sugar, egg and milk on high speed for 30 seconds. Spread batter evenly over the preserves. Sprinkle the brown sugar mixture over the top. Bake 25 to 30 minutes. Drizzle with icing while warm.
For Icing: Mix together powdered sugar, milk or water and vanilla until smooth.
Serves 6 to 8.
