Ingredients   (view qty in metric system instead)
Filling:
2 Granny Smith apples, peeled, cored and thinly sliced
1 1/2 cups frozen unsweetened pitted tart red cherries
1/4 cup sugar
2 tbsp. water, divided
1 tbsp. cornstarch

Topping:
1 3/4 cups all purpose flour
2 tbsp. whole wheat flour
1 tbsp. baking powder
1 tbsp. plus 1 tsp. sugar, divided
1/2 tsp. salt
1/3 cup solid vegetable shortening
1 large egg
1 tbsp. milk
1/4 tsp. ground cinnamon


Directions
For Filling:
Combine apples, frozen cherries, sugar and 1 tbsp. water in a medium saucepan over medium heat. Bring to a boil, stirring frequently. Reduce heat to low. Cover and simmer about 5 minutes until apples are almost tender, stirring occasionally. Stir together cornstarch and remaining 1 tbsp. water in a small bowl. Stir the cornstarch mixture into the fruit filling. Cook, stirring constantly, until thickened and bubbly. Pour the filling into a 1 quart casserole dish.

For the Topping:
Preheat oven to 400 degrees. Stir together the flour, wheat flour, baking powder, 1 tbsp. sugar, salt, shortening, egg and milk in a medium bowl until evenly moistened. Spoon the topping in 4 mounds on top of the filling. Stir together the remaining 1 tsp. sugar and cinnamon in a small bowl. Sprinkle the cinnamon sugar on top of the dough mounds. Bake cobbler about 15 minutes until a toothpick inserted into the biscuits comes out clean. Transfer cobbler to a rack and cool slightly before serving.
