Cherokee Corn Bread Pudding Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
1 1/4 cups cubed corn bread or corn muffins
2/3 cup milk
1 large egg
1 tbsp. molasses
1/4 tsp. ground ginger
pinch salt

Directions
Preheat oven to 275 degrees. Place corn bread cubes in a 12 ounce baking dish. Whisk together milk, egg, molasses, ginger and salt in a small bowl. Pour mixture over bread cubes and let stand 5 minutes. Place dish on a sheet pan and bake until edges are just set and center is still soft, about 40 to 45 minutes. Cool until warm.

Serves 1 to 2.
