Ingredients (view qty in metric system instead)
1 2/3 cup all purpose flour 1 1/3 cup yellow cornmeal 4 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 2 large eggs 1 1/2 cups buttermilk 14 ounce can cream-style corn 1/4 cup melted butter 1 1/2 cups shredded cheddar, divided paprika
Directions
Preheat oven to 375 degrees. Grease 16 muffin tins. Stir together flour, cornmeal, baking powder, baking soda and salt in a large bowl. Beat together eggs to blend in a large bowl. Add buttermilk, corn and melted butter. Stir into flour mixture. Add 1 cup cheddar and mix until evenly moistened. Spoon into prepared muffin tins. Sprinkle with remaining 1/2 cup cheddar. Dust with paprika. Bake 25 minutes until tops are firm. Cool completely in pan.
Makes 16 muffins.
