Ingredients (view qty in metric system instead)
Crust: 1 3/4 cups graham cracker crumbs 2 1/2 tbsp. sugar 6 tbsp. melted butter
Filling: 3 cups heavy or whipping cream, divided 2 tsp. powder unflavored gelatin 8 ounces cream cheese, room temperature 1 cup sour cream 6 tbsp. sugar 1 1/2 tsp. vanilla extract
Directions
For Crust: Preheat oven to 350 degrees. Combine graham crumbs and sugar in a food processor. Pulse to blend. Add butter and process until clumps form. Press crumb mixture evenly over the bottom and 1 1/2 inches up sides of a 9 inch springform pan. Bake about 12 minutes until crust is set. Transfer to rack and cool completely.
For Filling: Place 1/2 cup cream in a small bowl and sprinkle gelatin over. Let stand 5 minutes. Combine 1 cup cream with cream cheese in a medium saucepan. Bring to just a simmer over medium-high heat, whisking constantly. Remove pan from heat and whisk in gelatin mixture to dissolve. Strain mixture into a large bowl and let stand 45 minutes. Combine remaining 1 1/2 cups cream, sour cream, sugar and vanilla extract in a large bowl. Beat to soft peaks. Fold into cream cheese mixture in 3 additions. Scrape filling into prepared crust. Cover and refrigerate at least 6 hours before serving.
Serves 10 to 12.
