Ingredients (view qty in metric system instead)
Crust: 1 3/4 cups graham cracker crumbs 5 tbsp. melted butter 1 tbsp. sugar
Filling: 24 ounces cream cheese, softened 1 cup sugar 1 tsp. vanilla extract 1/2 cup fresh lime juice 3 large eggs
Directions
For Crust: Preheat oven to 350 degrees. Combine graham crumbs, sugar and butter in a small bowl. Stir until evenly moistened. Press crumb mixture into the bottom and halfway up sides of an 8 inch springform pan. Bake crust 5 minutes. Set aside while preparing filling.
For Filling: Combine cream cheese, sugar and vanilla in a large bowl. Beat until smooth. Add lime juice and eggs and beat until creamy. Pour into prepared crust. Bake 60 to 70 minutes until filling is set and top is lightly browned. Cool cheesecake on a rack to room temperature. Refrigerate 8 hours or overnight. Remove pan sides and slice. Serve with whipped cream if desired.
Makes one 8 inch cheesecake.
