Ingredients (view qty in metric system instead)
2 tbsp. vegetable oil 1 1/2 cups chopped onion 1 1/2 tsp. minced garlic 8 ounces sliced mushrooms 1 1/2 pounds ground beef 2/3 cup fresh breadcrumbs 1/3 cup minced fresh parsley 1/4 cup ketchup 1 large egg, beaten to blend 1 tsp. salt 1/2 tsp. pepper 1/2 tsp. dry thyme 1/4 tsp. dry ground sage 6 ounces grated cheddar or monterey jack cheese
Directions
Cook onion with oil 4 minutes. Add garlic and mushrooms and cook until mushrooms are golden and liquid evaporates. Cool. Preheat oven to 350 degrees. Combine beef, breadcrumbs, parsley, ketchup, egg, salt, pepper, thyme and sage. Pat into square on plastic wrap and spoon mushroom mixture over, leaving 1/2 inch border. Sprinkle cheese evenly over mushrooms. Roll up loaf using plastic wrap as an aid. Place in a loaf pan and bake approx. 1 hour or until sides shrink and loaf is brown. Let stand 10 minutes before slicing.
Makes 1 meatloaf.
