Ingredients (view qty in metric system instead)
1 tbsp. vegetable oil 1 medium onion, peeled and chopped 1 medium carrot, peeled, halved lengthwise and thinly sliced 1 stalk celery, thinly sliced 1/2 red bell pepper, diced 1 medium potato, diced 2 tbsp. all purpose flour 1 cup chicken broth 3/4 cup water 1/4 tsp. ground cumin 1/8 tsp. cayenne pepper 1/2 tsp. salt 1/2 tsp. pepper 1 cup grated cheddar cheese 2 tsp. minced fresh cilantro
Directions
Heat oil in a large saucepan. Add onion, carrot, celery, bell pepper and potato and cook, stirring frequently, until onion is softened, about 10 minutes. Add flour and cook, stirring, 3 minutes. Stir in broth, water, cumin, cayenne, salt and pepper and simmer until potato is tender, about 10 minutes. Remove from heat and gradually stir in cheddar until melted. Stir in cilantro.
Serves 2.
