1 tbsp. butter 1 tbsp. vegetable oil 1/2 cup chopped onion 3 cups frozen, thawed hash browns 2 tbsp. solid vegetable shortening 6 beef cubed steaks, about 6 to 8 ounces each 1/2 tsp. salt 4 tbsp. ketchup 6 ounce package shredded Cheddar cheese
Directions
Melt butter with vegetable oil in a large skillet over medium high heat. Add onion and cook about 5 minutes, stirring occasionally, until softened. Add has browns and cook, stirring occasionally, until browned and starting to crisp on edges. Remove hash browns from the heat. Melt shortening in a separate large skillet over medium heat. Add cubed steaks and cook about 3 to 5 minutes per side until browned. Season steaks with salt. Spread each steak with 2 tsp. ketchup. Spoon 1/2 cup of the cooked hash browns onto the top of each steak. Sprinkle about 1 ounce of the Cheddar over each steak. Reduce heat, cover and cook steaks about 2 to 3 minutes until cheese is melted. Serve steaks immediately.
