Ingredients (view qty in metric system instead)
1 pound shredded Cheddar cheese, plus additional for garnish 1 cup chopped onion 1 tbsp. olive oil 3/4 cup canned, drained diced green chilies 3 cloves garlic, peeled and minced 1 1/4 tsp. ground cumin 3 cups milk 3 cups prepared mashed potatoes 1 1/2 cups canned vegetable broth 1/4 cup chopped fresh cilantro leaves fried tortilla strips
Directions
Cook onion in oil in a large saucepan about 5 minutes until tender. Stir in green chilies, garlic, cumin, milk, mashed potatoes and vegetable broth. Cook over medium heat, stirring constantly, until smooth. Reduce heat to low and add shredded Cheddar. Cook, stirring, until Cheddar is melted-Don't boil. Stir in cilantro leaves. Ladle soup into bowls, garnish with additional shredded Cheddar cheese and fried tortilla strips and serve.
Serves 6.
