Celebration Cheddar and Walnut Stuffed Mushrooms

Ingredients (view qty in metric system instead)
1 pound whole, medium sized, fresh white mushrooms, washed and dried 6 tbsp. butter, melted 1 medium onion, peeled and finely chopped 1/2 cup chopped walnuts, toasted and chopped 1/2 cup chopped fresh parsley leaves 1 cup grated sharp Cheddar cheese 1/2 cup soft, fresh, fine bread crumbs pinch salt
Directions
Preheat oven to 350 degrees. Remove the stems from mushrooms. Chop stems. Brush the mushroom caps all over with the melted butter. Transfer the caps to a sheet pan and place hollow side up. Combine remaining melted butter, chopped mushroom stems and onion in a large skillet. Cook about 5 minutes, stirring occasionally, until onion is softened. Remove the pan from the heat and stir in walnuts, parsley, Cheddar, bread crumbs and salt. Mound the mixture into the mushroom caps. Bake mushrooms about 25 minutes until caps are tender and filling is heated through. Serve hot.
Makes about 2 dozen mushrooms.
