Ingredients (view qty in metric system instead)
1 large head cauliflower, cored and cut into small florets 4 tbsp. butter, divided 2 tbsp. all purpose flour 1 1/2 cups milk 2 cups grated sharp Cheddar cheese 1/2 cup finely chopped green onions 1/2 tsp. salt 1/2 tsp. pepper 20 saltine crackers
Directions
Preheat oven to 450 degrees. Butter a 2 quart baking dish. Cook cauliflower in a large pot of boiling, salted water until just tender. Drain well. Transfer cauliflower to prepared dish. Melt 2 tbsp. butter in a large saucepan over medium-low heat. Whisk in flour. Cook, whisking constantly, 3 minutes. Gradually whisk in milk and bring to a boil. Reduce heat and simmer sauce 8 to 10 minutes. until thickened, whisking frequently. Remove sauce from heat and add Cheddar, green onions, salt and pepper. Whisk until cheese is melted. Pour sauce over cauliflower and stir to combine. Melt remaining 2 tbsp. butter in a small saucepan. Crumble saltines into a medium bowl. Pour melted butter over and toss to coat. Sprinkle crumb mixture evenly over cauliflower. Bake about 10 minutes until cauliflower is heated through and crumbs are golden brown.
Serves 6 to 8.
